Every modification the community spent years and money adding — PID control, brew pressure gauge, pre-infusion, 9-bar pressure regulation — is factory-built in from the first shot. Designed and manufactured in Italy, the Classic UP is the result of Gaggia listening to three decades of enthusiast feedback and delivering it in a single, coherent machine.
Precision Where It Matters: Temperature
Brew temperature is the variable that separates a good espresso from a great one. The Classic UP uses a dual PID system — one probe for brew, one for steam — with the temperature sensor repositioned directly on the boiler for a more accurate real-time reading. Brew temperature is adjustable in 1°C increments from 80°C to 100°C, displayed live on the 2.4″ color TFT screen during extraction. Recovery time after a shot is approximately 25 seconds — fast enough for consecutive pulls without temperature drift.
Pre-Infusion Built for Every Roast
Three dedicated pre-infusion profiles let you match the extraction to the coffee rather than forcing every roast through the same routine.
- Light: 2-second active phase / 1-second soak — gentle wetting for high-clarity single origins
- Medium: 8-second active phase / 3-second soak — balanced saturation for versatile everyday espresso
- Dark: 12-second active phase / 3-second soak — extended bloom to tame high-solubility roasts
The active phase runs at a controlled 3g/sec low-flow rate, followed by a soak phase before full pump pressure engages. The result is even bed saturation and a more consistent extraction from shot to shot.
The Hardware Underneath
The Classic UP inherits the lead-free brass boiler from the Classic E24 — the same boiler architecture used in Gaggia’s prosumer GT — with modifications to accommodate the PID probe and pressure gauge connection. The brew path is fully metal from boiler to group head, with the pressure gauge mounted directly to the boiler for an accurate real-time reading at the puck.
The 9-bar OPV is factory-set and calibrated. The commercial-grade 58mm stainless steel portafilter is the same form factor used across professional equipment — compatible with the full ecosystem of third-party baskets, screens, and accessories.
Controls That Don’t Get in the Way
Three backlit toggle switches handle the primary functions: power, brew, steam. The 2.4″ color TFT display and four capacitive touch buttons give access to the settings menu — pre-infusion profile, shot timer, brew temperature, scheduled switch-on, and auto standby. During extraction, the display shows live boiler temperature and shot timer simultaneously. The interface is intuitive enough that it doesn’t require reading a manual, and deep enough that it doesn’t limit an experienced barista.
